So let's start with the basics.

When heating water over high heat, you should watch for bubbles rising to the surface. If you see them, turn down the burner slightly until the bubbles disappear entirely. Once the water begins to boil, add 1/8 cup of salt (or any amount) directly to the pot. You want to stir the salt around constantly with a wooden spoon while keeping the bottom of the pot at a simmer. Once the salt starts to dissolve, remove the pot from the heat. Now add 2-4 whole eggs to the hot, salted water. Let sit for 10 minutes before separating the eggs.

Now scramble the eggs as usual; instead of removing the shells once cooked, leave them on the eggs. Remove the eggs from the boiling water after about 5 minutes and place them back in the same salty bath. After another 5 minutes of cooking, drain off the excess water. Leave the eggs in their shells to set overnight.

The next day, separate the yolk from the whites. Place the whites in a bowl, cover, and refrigerate. Save the yolks in a container for later use.
